In early 2025, in the office of an unnamed winery out on the stony flats of the Heretaunga Plains, a top-secret Three Fates meeting took place. Our host — a legend in her own right, and the mind behind a still-classified project we’re cooking up together — insisted the tasting glasses be immaculate. They weren’t. With a quiet shake of her head, she reached for something that stopped us in our tracks: a winery-branded tea towel, softened by decades of loyal service, polishing glasses since the mid-’80s.
